Behind the non-traditional name of the artisan bakery and café KIN & K is a nice guy from Yemen, Haitham Al-Shoriy, and his friends. The group of enthusiasts, who call themselves “KIN”, which is the English word for family, have several other things in common besides business. They live together, create together and have a cat, Koji, who, according to Haitham, is their guru. The separate “K” in the name therefore also belongs to her, as she is the soul of the entire project and an important part of each of their lives.

The founder of the project, Haitham Al-Shoriy, is no stranger to gastronomy. He has been working in various roles for 8 years, and for the last four years he has been roasting coffee in his own roastery in Prague. As an experienced barista and roaster owner, he also brings quality coffee under the Tribes of Mokha brand to Gurmán.

Haitham and his friends had been planning to open a craft bakery and café for a long time. When the offer to become part of Gurmán Harfa came, they did not hesitate for long. They were also interested in the opportunity to break the stigma surrounding the quality of similar food courts within shopping centers. The team around Haitham sees great potential in the entire concept and is looking forward to it being, together with other vendors in Gurmán, a new place where locals can go for a gastronomic experience. “We are happy to be able to offer customers from the area a place where they will be happy to return for their favorite products, come and chat with us, sit, have a good coffee and try something unconventional from time to time.” They want a large space in KIN & K in addition to the permanent offer also offers seasonal products and bakery specialties from different corners of the world. “The whole concept of our artisan bakery is that customers can look into the open kitchen through a large glass window. We want every visitor to see how our products are made, to tune into our energy and to feel at home. We see the diversification of the baked goods offer with specialties from countries such as Turkey, Malaysia, Indonesia, Brazil, Japan, Venezuela, Mexico and others as a symbolic window to other worlds. It may all sound like a cliché, but we want to bring people an experience, ”explains Haitham.

And what from the KIN & K offer should you not miss? “It’s definitely our almond croissant or pain au chocolat. The menu includes popular snails, filled bagels, baguettes, brioches and vegan specialties. We also have alternative plant-based milks for preparing various types of coffee,” adds Haitham. They also have a Christmas offer of sweets ready for pre-order and are also planning a catering offer.

As for suppliers, KIN & K is planning to expand its network of local producers and farmers. “The selection of ingredients is a key issue for us. In addition to quality, we want to support local production,” concludes Haitham. All the ingredients they use for production will also appear in the store’s assortment.
